Firm fillets bathed in a hung-yoghurt marinade of ajwain, Kashmiri chilli and mustard oil, char-grilled in the tandoor until smoky at the edges, finished with coriander and a squeeze of lime.

Plump prawns simmered in a sun-warmed Goan gravy, sharpened with black pepper and red Kashmiri chilli, then lifted by a curl of fresh curry leaf. The coast, in a single bowl.

Fragrant basmati rice infused with rich whole spices, and melt-in-your-mouth tender protein. Cooked low and slow the traditional way to bring you a deeply satisfying, soul-warming Indian classic.

Flaky layered and blistered naan, pulled to order and brushed with butter and toasted to perfection.

Golden dumplings of milk solids soaked warm in a cardamom-and-rose syrup, served with vanilla-bean ice cream. The sweet end to the meal.
